Slopes by Talisker

Embracing the “living well” mantra envisioned by the hotel’s Golden Door Spa, Slopes by Talisker focuses on freshness, variety, quality, flavor, nutrition and balance. Slopes will emphasize locally sourced ingredients and showcase the best seasonal offerings. The restaurant will provide the high level of service and memorable dining experiences that are hallmarks of the Talisker Restaurant Collection, which includes Talisker on Main and The Farm. Bistro at Canyons, serving modern American kosher cuisine, will be the fourth member of the Talisker Restaurant Collection when it opens in December 2011.

Created by Chef John Murcko and led by Executive Chef Clement Gelas, the Slopes menu will feature a wide variety of dishes that are hearty and healthy with special care and attention to the dietary needs and preferences of guests including gluten free and vegan choices that are as delicious as they are healthy.

A casual menu will be offered in the lounge and a more extensive menu offered in the dining room. The restaurant will have 120 seats indoor and additional outdoor seasonal seating with views of the pool and scenic outdoor courtyard. Slopes will serve breakfast, lunch and dinner.

Executive Chef Gelas was previously the Club Chef at Tuhaye Table Café, which is part of the Talisker Club real estate collection in Park City. Born and raised in Boege, France, Chef Gelas brings an international flair to Slopes from his experience working at La Maison de Marc Veyrat, which serves upscale mountain cuisine in the French Alps, and at L’Oxlays, a Michelin starred, fine-dining restaurant located in the mountains of Val Thorens in Savoy, France. He expresses his passion for cooking through local ingredients that he infuses with the culinary traditions of his home country.
